How should one handle income generated over & above your salary? In other words, how do I declare this income, but not lose 40% of it to SARS?

First it depends on the soure of income. If income received is other than income from standard employment,you can claimed expenses in the production of that income. This will bring your 40% tax rate down,depends on the amount of expenses claimed.
